OPERATIONAL PRODUCTION PLANNING FOR THE EXPANSION OF THE PIALLET DAIRY FINE GOAT CHEESE LINE

The study analyzed the expansion of fine goat cheese production at the Piallet dairy in Florestal-MG, aiming to increase the production of fresh cheeses (Boursin, Minas Frescal, Feta) by 50% and of matured cheeses (Caprino Romano, Chevrotin) by 20%. Through mass balances, process mapping and timing, it was found that an additional 6,824.25 liters of milk per month and an extra employee were needed. The current operational capacity, with adjustments to equipment and structure, supports the expansion, but requires optimization. The assessment of the facilities identified compliance and improvements to meet health standards. The 5W2H action plan proposed strategies for raw materials, operations and infrastructure, strengthening the new Santa Cecília brand.
