Effective management in Food and Nutrition Units (FNUs) transcends the domain of classic administrative principles (Planning, Organizing, Directing, Controlling). This article demonstrates how the application of humanized leadership and team engagement, using the PDCA cycle and methodologies such as the 5S, directly impacts process optimization, waste reduction, and service reputation. The objective is to show that technical excellence is inseparable from patient-centered care and the valorization of internal staff, highlighting the role of the Nutrition and Dietetics Technician (NDT) as an agent of transformation.
