STANDARDIZATION OF PROCESSES AS A SCALABILITY FACTOR IN GASTRONOMIC BUSINESSES

Process standardization has assumed a strategic role in the gastronomic sector, particularly in light of the demands related to operational efficiency, consistency of delivery, and structured business expansion. This study aimed to analyze process standardization as a determining factor for scalability in gastronomic businesses, seeking to understand how the organization of operational routines contributes to performance, replicability, and sustainable organizational growth. Methodologically, the research is qualitative in nature, based on a bibliographic approach with exploratory and explanatory objectives, grounded in the analysis of scientific literature addressing process management, operational efficiency, and organizational growth in the context of food service. The results indicate that standardization reduces operational variability, supports cost control, strengthens productive efficiency, and enables the replication of business models across different units, creating conditions for planned scalability. It is concluded that process standardization represents a structural element for sustainable growth in gastronomic businesses, supporting governance, decision-making, and quality maintenance throughout expansion processes.
